Tofu Scramble

Ingredients
  

  • 2 Onions Red
  • 5 cloves Garlic
  • 2 packets Hard Tofu
  • 2 stems Kale
  • 2 tsp Ginger
  • 2 tsp Turmeric
  • 1 tbsp Curry Powder
  • Salt & Pepper

Instructions
 

  • Begin by adding olive oil to a pan
  • Add finely chopped onions and garlic to the pan
  • Cook over medium heat until the onions are soft and golden brown
  • Add chopped kale to the pan and cook until tender
  • Microwave the tofu briefly to warm it
  • Crush the tofu into bite-sized pieces
  • In a mixing bowl, combine the crushed tofu with a well-balanced mix of seasonings, including salt and pepper
  • Transfer the seasoned tofu mixture to the pan
  • Add sundried tomatoes to the tofu mixture
  • Stir and cook until the tofu is thoroughly heated and all ingredients are well combined
